BROCCOLI SOUP WITH HAZELNUTS AND COCONUT MILK
INGREDIENTS
1 Coarsely chopped Zittauer onion
1 large potato cut into small pieces
1 tbsp vegetable broth
water to cover vegetables
1 broccoli
Coarse salt
Freshly ground pepper
Peppers
Roasted hazelnuts
PROCEDURE
Saute onion in golden butter in a pan, add potato pieces and saute them for a moment.
Pour in water and broth and bring to the boil and let the soup cook on low heat and under the lid for approx. 10 min.
Cut the broccoli into small pieces and add.
Blend the soup.
And season the soup with salt and pepper.
Top with creamy coconut milk, peppers and roasted hazelnuts.
