CAULIFLOWER SOUP WITH CHORIZO

Here is for 2-3 people

INGREDIENTS
1 head of cauliflower
1 large potato
1 onion
1 clove of garlic
1 tbsp. Herbamare broth
water
Salt and pepper

1 chorizo ​​sausage per person
bread of choice

PROCEDURE
Fry chopped onions and pressed garlic in a little oil in a pan.
When they are ready, add the peeled potato in small pieces and the rinsed and divided cauliflower.
Add it a little, and then add water so that it almost covers the vegetables.
Let it boil up, then turn down the heat and let it boil until tender for approx. 10 minutes

In the meantime, fry the chorizo ​​sausages in small pieces on a hot pan, and when they are about to finish, fry pieces of bread in the fat.

If you don't want so much fat in your food, I can recommend frying turkey bacon and using raw Jerusalem artichokes, peeled and cubed as a crunch on the soup.

Top with your favorite herb, possibly blended with oil so you can make a green oil, or spring onions.
