GARLIC SHRIMPS WITH BROCCOLI AND KALE SALAD

For 2 people:

 

INGREDIENTS
1 packet of broccolini (I buy mine

at nemlig.com)
olive oil
a bag of raw vannamei prawns 500 g.
a red chili
2 cloves of garlic
salt and pepper

SALAD
1/2 bag of kale rinsed and cut
a can of beans, here I used kedney
1 red onion

DRESSING
2 tbsp peanut butter
juice of 1 lime
a handful of coriander
1 dl. water
3 tbsp soy
1 tbsp honey
2 dl. coconut milk

Heat the oven to 200 degrees fan.
Rinse the broccolini and place them in a dish with baking paper.
Toss them in olive oil, salt, pepper.

Bake them for 15 min. until they are a little burnt here and there, but of course not totally burnt..!:)

While the broccolini (are they called that in the plural?!) are in the oven, you mix the salad with the beans and blend the ingredients for the dressing, and mix it all together in a large bowl.

Then you fry the thawed prawns, which you just have to twist in your hands so that they are not too wet.

Preferably use a metal pan (mine is from IKEA) without Teflon, as these can achieve a much higher heat. Heat the pan, pour plenty of oil and wait until the oil evaporates a little. Then add the prawns, together with finely chopped chilli and pressed garlic. Fry them for 3-4 minutes. Remove them from the pan and arrange them together with broccolini and a bowl of salad. Pour in the excess fat with garlic and chilli, in addition to the baked broccolini
