TURMERIC AND COCONUT MILK DRESSING ON SWEET POTATO SALAD
DRESSING
blend the following:
A can of coconut milk
10 g. fresh turmeric
10 g. fresh ginger
1 clove of garlic
2 tbsp. sesame oil
2 tbsp. soy
1 tbsp. honey
taste with salt and pepper
juice and zest from 2 organic lemons
BAKED SWEET POTATOES
4 large sweet potatoes (approx. 500 g.)
1 dl. olive oil
Oregano
Thyme fresh or dried
Flake salt fresh or dried
Fresh pepper
Cut 4 large sweet potatoes into cubes and place them on baking paper on a baking tray. Pour a little/a lot of olive oil on and toss it together with the oregano and thyme, salt and pepper. Bake it for 30 min at 200 g. hot air.
SALAD
Red cabbage
Spinach leaves
Faroese salmon
1 lemon
Cut the red cabbage into strips, rinse the spinach and cut the salmon into cubes after removing the skin. Squeeze half a lemon over the salmon and season with salt and pepper.
Arrange everything in a bowl, sprinkle with sesame seeds and top with the dressing.
