Lemon muffins

Ingredients for 8 pcs:

  • 1 package of butter 200 g.
  • 100 g. marzipan 
  • 150 g sugar
  • 3 eggs
  • 2 lemons
  • 80 g. wheat flour 
  • 2 tsp. baking soda 
  • 2 tsp. vanilla sugar 
  • 2 tsp. birches (can be omitted)
  • 1/2 tsp. salt

How to 

  • Preheat the oven to 180 degrees
  • Whip the soft butter in a mixer e.g.
  • Grate the marzipan on a grater
  • Mix all the wet ingredients into the butter + sugar. Beat until combined.
  • Now add the dry ingredients (flour, baking powder, vanilla sugar, salt and birch)
  • Pour the mixture into a rubber muffin tin, it does not need to be greased as there is plenty of butter in it and the tin will release easily.
  • Bake the cakes for 25 min. 
  • Let them cool completely before topping with icing
