Protein muffins

Protein-rich muffins with protein powder, based on vegan protein from peas and rice. I eat one for breakfast with a smoothie. And thereby get both protein from eggs, banana, fat from coconut oil and chocolate and extra protein from the protein powder.

You need this to make a small muffin tray:

  • 2 bananas
  • 3 eggs
  • 2 tbsp coconut oil
  • cinnamon to taste
  • 2 dl. oatmeal
  • 2 spoonfuls of protein powder
  • 1 teaspoon baking powder

Procedure:

Put all the ingredients in a bowl and mash the bananas with a fork or your hands (I do this, it goes much faster!).

Let them bake for approx. 20 min at 180 degrees or until you can see they have had enough. Take them out and sprinkle with dark chocolate and coconut flakes. Or top with vanilla skyr and blueberries.
