TOASTED RYE BREAD WITH SPOKEN EGGS AND AVOCADO

INGREDIENTS
2 slices of rye bread
1 egg
1 small avocado
salt and freshly ground pepper
1 tablespoon olive oil for frying
1 lemon
Fresh herbs, e.g. chives or cress

PROCEDURE
Toast the rye bread, in the oven or in a toaster.

Fry your egg on a pan in a little olive oil.

Serve your toasted rye bread with the slices from a small avocado and one fried egg. Sprinkle with salt, pepper, lemon juice and fresh herbs.
