POKEBOWL WITH MARINATED BEEF, PICKLED ONIONS AND PEANUT SAUCE
BEEF 3 PORTIONS
400 g. beef strips
3 tbsp toasted sesame seeds
4 tbsp cane sugar
4 tbsp tamari
Grated ginger to taste
2 cloves of garlic
1 dl peanut oil
3 red onions
2 dl. vinegar
2 tablespoons sugar
DRESSING
2 tablespoons peanut butter
juice from 1 lime
a handful of coriander
1 dl. water
3 tbsp soy
1 tbsp honey
2 dl. coconut milk
INGREDIENTS
1 squash
1/2 avocado
1/2 bell pepper
50 g. edamame beans
50 g. red cabbage
50 g. grated carrot
PROCEDURE
THE MEAT
Mix everything for the meat together in a bag and mix it well. Add the meat and leave it to soak overnight in the fridge or min. 4 hours - the sugar helps to make the meat nice and tender.
The next day you start by cooking red onion cut into strips, in a brine of vinegar and sugar, until the moisture is absorbed.
Put rice on top, according to the instructions on the package.
Mix the dressing and blend it evenly.
Then you cut a squash into long slices, turn them in oil, and sprinkle salt and pepper on. Then bake them in the oven at 180 degrees until they are tender, it takes approx. 15 min.
Now fry the meat until crispy on a pan over medium heat, take a little bit of meat at a time so that it is not cooked, but fried.
Slice the vegetables and steam the edamame beans in a little water in a small pot. Assemble your pokebowl by starting with rice as a base, pour the dressing over the rice so that the vegetables look fresh without any sauce on them and eat!:)
